Radiation treatment of food is implemented in accordance with international standards and codes established on scientific grounds, and irradiated foods are distributed in international markets at a practical level. This paper outlines the application of food irradiation technology, as well as the international evaluation and international standards for irradiated foods. At the same time, Japanese history of research and development and the discussion on the technology in related organizations are explained to help understand the current domestic situation. Lastly, the trend of international coordinated research on food irradiation is presented, and the direction of future technological development is indicated.
